Some games can be played on both systems, they will usually have a notice though. But yeah, there should be a link like "buy as gift". That will allow you to send it to a person provided you know their gamertag.

but so the buy as gift option would allow them to accept it onto their Xbox one?

i want to gift someone dead by daylight for Xmas as an example

Yes, they would get a notification that someone is trying to gift them something, they then click accept, and the gift is delivered.
