I've never played Skyrim with mods before. I have enjoyed thousands of hours of vanilla Skyrim, and despite the love I have for the game, I can acknowledge the shortcomings and that it lacks a lot of things that could make it better.

So I'm ready for my first modded playthrough. I've researched mods and believe I have compiled a list that will provide me with what I might call a proper Skyrim experience. My notes that I scribbled in the word document are still present because I was too lazy to delete them.

Before I post the list, does anyone know of a good reputation mod that makes NPCs and towns react to you differently based on reputation? I could have sworn I saw a mod like that during my research, but I haven't been able to find it again.

I'd take out Wet and Cold. It has been known to have issues with random freezes. Had it happen myself.

Wildcat and really anything by EnaiSaion is amazing.

Now that I think on it, I think what I'm trying to turn Skyrim into is all of the good elements from Skyrim, Baldur's Gate and Dark Souls.

I do not, sorry. It might say something in the mod's description. https://www.nexusmods.com/skyrimspecialedition/mods/695 It says it's compatible with most dragon mods.

I'd never heard of Ultimate Dragons before, is this the mod you're talking about? https://bethesda.net/en/mods/skyrim/mod-detail/4094857 If so, I'd personally recommend getting Diverse Dragons and then just getting a different mod if you want to bump the health / damage of the dragons. I say this because DD's new dragons all have unique breath attacks anyway; green poison, lightning bolts, explosive fire, health drain, you name it. If this Ultimate Dragons mod randomly adds Alduin's meteor shout, I'd recommend against using it; spells that add a lot of projectiles at once are at higher risk of causing crashing.

Not that I know of; enemy mages will make use of certain Ordinator perks, but they won't learn Apocalypse spells. They can occasionally spawn Apocalypse-style staves and use those, however.

Definitely pick up Apocalypse regardless. It does for magic in this game what Ordinator does for perks. The difference being that it doesn't affect or overwrite existing vanilla spells, just adds a ton of excellent new ones that make magic a much more interesting and tactical approach, as opposed to the vanillla method of 'stunlock 'till they finally die.'

Immersive weapons/armour can be nice.
Cloaks of Skyrim
Frostfall can be fun if you want to get into survival aspect of things, otherwise don't bother with it.
Various mods to make the NPC's/you look better than the horrendous dog shit scrapings they do in standard Skyrim
Some mod to make NPCs run away in Dragon/Vampire attacks as otherwise you will find important/shopkeepers dead.

O does anyone know if a seemless gameplay mod exists? It would be great if I could switch weapons and stuff without having to pause the action.

Make sure to get the mod that turns the dragons into Thomas the Tank Engine.

SkyUI? I think lets you hotkey/favourite things, so can just use that.
