Ok, many of you have known me...well.....for decades at this point. I used to be a really great cook. In fact, when I met my wife over 20 years ago, she had bought 300$ worth of frozen food from costco for when I first visited her. I was so against frozen food, that we didn't eat any of it (I did pay for all the meals though, that I either cooked at her house (or more often that we ate out).

I think my cooking and my awesome backrubs were some of the best features that made her fall in love with me.

Anyway, my cooking has gone downhill since she passed, seriously downhill, and last time I went shopping, out of desperation for fish sandwiches/tacos, I bought mortons frozen sticks, portions and sandiwch patties (all breaded). Today I used the portions (they are like long triangles?) to make fish tacos.

Now, I should preference this with the fact that many many (like 30) years ago, I tried them, and they were mushy and it's one of the reasons I avoided frozen foods.

But I followed the instructions extactly, 425 preheat, 15 minutes on each side in the over. I tossed the corn tortilla's in for the last 3 (under the pan so they heated up on both sides. I used fresh lettuce and cut up tomatos and DAMN THOSE WERE GOOD.

Seriously better then any of the crappy places I have found around here, and much cheaper. I had 5 fish tacos (hadn't eaten at all today and it was after midnight).

I believe 12 come in a bag, and I could probably eat either 1 more or 1 less (probably 1 less), which will make 3 meals (4 tacos a pop) in the future.

Anyway, they actually can be very delicious, so if you have had them in thepast and they were mushy or not good, they are different now...and worth trying. Especially if you can't find fish tacos/sandwiches in your area.

I am slowly finding new meals to make/enjoy, primarily using my instant pot, but sometimes things like this, which are fast and don't take hours of work/prep etc. It's more of a bachelor type diet, with soups, chicken legs, lettuce wraps etc but I'm getting there. Was very hard converting to cooking for 4 people, and making huge meals, to cooking just for myself.

Now I can no longer turn my nose up at frozen foods.
