Star Fox Adventures blew me away at the time.

As modern games go, Assassins Creed Odyssey is real pretty. And I love the style of Kentucky Route Zero.

Other than the obvious games everybody mentions, I think Animal Crossing New Leaf is gorgeous despite being on a tiny 3DS screen. The lighting on everything as the day progresses, including the sky, is gorgeous. And that's not getting into how the colors change between seasons. I always loved how the snowflakes in winter will actually land on the ground/trees/buildings/items for a second before disappearing.

Blown up into HD the game looks amazing.

I'm also excited for New Horizons which is a bit different but hopefully just as strong, visually.

Also: Journey--beautiful use of color and lighting.
The Wind Waker and Okami--both are amazing uses of cel shading
Katamari Damacy--while not graphically impressive, it's visually very strong, I love how everything looks, and it's a feat of design that it gets you to increase scale by many times over seamlessly.

The game I remember that utterly stunned me was Battlefield 2. After the first Crysis came out nothing has really impressed me since.

Resident Evil Remake on the Gamecube in 2002. The fact that it still looks great compared to modern video games 18 years later is a testament.

Agreed with Metroid Prime (1-3) and REmake.

I love how F-Zero GX looks too, especially considering it runs at a smooth 60FPS. And Rogue Leader. And Wind Waker, Killer7 and Viewtiful Joe for some cell-shaded goodness.

The Cube put out some really good graphics.

In the same gen, Ninja Gaiden Black and the Splinter Cells on the XBOX also looked great.

Tales of Phantasia was one of the best looking SNES games.

Legend of Mana (PS1) looks fantastic.

Edit: I've only seen screenshots and video of Splinter Cell (minus the first GC one) and Viewtiful Joe.
