You didn't get a temporary voucher to prove your real plates are on the way?

I'd say bring any documentation with you wherever you drive. Is there a tracking number or something that shows it's in transit? Or some kind of future delivery notice?

I will say I drove around for two months with expired tabs before realizing. But an expired temporary license might draw more attention than expired tabs.

You could go to the DMV too and see if they can give you another.

And you may not even get pulled over. I drove with an expired tag for a full year and had no idea until I went in to renew it the next year

It really depends on the cop that pulls you over (if you get pulled over). If you provide proper documentation that stuff is purchased but still in the mail some will just be like "ok, get it taken care of ASAP". Some will be jerkoffs and still give you a ticket. I actually once got a ticket for a taillight being out despite being on the way home with a new taillight to get it fixed. I even showed the cop the taillight and he was like "well, you should have fixed it there in the parking lot". Like yeah dude, I'm gonna tear apart my taillight assembly in the parking lot when it's five minutes from home and my garage.

Just explain the situation if you get pulled over. Cops these days are very understanding and chill.
