For example, a trans man is a man, so isn't it more accurate to call him a man, as opposed to trans man? Wouldn't using the trans label be offensive because it's implying they aren't just a regular man?

The terms "cis woman" and "trans woman" exist for a practical reason that has nothing to do with judgement or bigotry. It's a simple matter of clarity and specificity.

Because they were born as the opposite sex and expected to perform a gender role aligning with their sex, and thus they "transition" their sex or their gender presentation to align with their gender identity.

In regards to a trans person, some degree of transition - whether it be medical or social - tends to be involved. Hence, transgender.
