There is no lore reason that Master Chief keeps his helmet on, it's just that in game you are almost always in situations where he should be wearing a helmet. I did get annoyed when he wouldn't put the helmet back on when it looked like danger was evident. But the show just isn't great. The action scenes were fairly fun, but everything else us just blah. Plus I get it's an adaptation and it's own thing, but some of the changes they are making kinda suck. More importantly, the theme song of the show is the most generic shit.
