Mild Hot Fire Diablo Which Taco Bell hot sauce shall adorn your Mexican-inspired meal? - Results (54 votes) Mild 16.67% (9 votes) 9 Hot 16.67% (9 votes) 9 Fire 35.19% (19 votes) 19 Diablo 31.48% (17 votes) 17 Beyond heat (capsaicin levels), I find that the sauces differ from each other. Mild is mostly a light acidic, sweet taste. Hot has more of what is in mild, but also has more paprika. Fire is almost completely different, it is very tomato-y, onion-y and has a texture/taste that is closer to salsa. I used to love Cholula, but for some reason this local place uses Frank's Red Hot and another place uses Tabasco and I like that again. I have an almost empty bottle of Cholula in the kitchen.
