I know it's a genetic thing where it "tastes like soap" and I've supposedly got it, but it more tastes... idk, floral to me? In dishes where it is present it doesn't really override the other spice.

There's a bunch of papers but here's one. Also: preference and detection may be driven by separate genes/gene complexes with some overlapping association. However, binding of the 'soapy' functions (a specific group of aldehydes) has been shown to be associated with a specific genetic variation in an olfactory receptor. It's a robust finding.

The difference is there are specific aldehyde chemicals you do or do not taste in cilantro that is also used in making soap. It's not just down to personal taste.

I know there's an actual soap gene. When the human genome is fully analyzed, they will have found thousands of genes that directly affect smell and taste of various foods. But cilantro is the only one that people defer fully to the gene.

By the way, all studies do conclude that the gene is only a small part of the overall psychology and (like with any food) repeated exposure can change your taste.

I don't think that's true. It's in practically every Mexican dish ever and that's the most popular cuisine in North America. Europeans might not eat it as much though.

Tastes like soap, hate it, but when it's cooked in and subtle it does add to flavor in a way that hopefully isn't overpowering.

Like, bite of cilantro is awful. But the little bit of cilantro that goes into Chipotle rice helps the flavor profile.

Cilantro tastes like soup!

Really though, I like cilantro and don't know for sure if I have the soap taste or not. It is a pretty intense flavor to me and I would describe it as tasting "clean and fresh" somehow, but not in the same way soap might taste "clean."

Also (probably flat-leaf) parsley tastes very similar to me, but a little less intense and more classically vegetative than cilantro. I enjoy it too.

Mexican being popular cuisine doesn't mean everyone likes it or eats it. There are probably people who don't like Mexican food because of the cilantro.

Like yeah, you can get used to anything if you eat it enough, but I'm probably not going to keep eating something that's not palatable to me.
