I generally go by price point, even more so now after the Covid apocalypse.

85/15 is my default for most things. 80/20 is acceptable for burgers. Ill never get fattier than 80/20 and I dont like leaner than 85/15.

price is the main factor. but if they're somehow all equally priced, i feel like 80/20 is the usual go-to.

Usually something fatty like chuck shoulder. I also save beef trimmings from steaks and use that too.
Grinding it myself matters because store bought ground beef has to be cooked well done but grinding it myself does not.
