The bosses are some of the worst they've ever made, from move sets, repetition, AOE spamming. Everything else though is top notch.

Yeah, I remember too many bosses just having no rest period between most attacks. Like one will just do a 20 move combo, but when I go for one swing after they finish, they just back hand me like nothing lol. Except Radahn, Radahn is probably a top tier fromsoft boss just cause you can use your horse, makes the fight so much cooler.

Yeah some enemies and bosses are so ass to fight. I've beaten it like 20 times and I dread a lot of the late game garbage. And just grafted scions in general

Yeah, I've watched you tube vids breaking them down. Malenia is the most egregious (she just straight up breaks so many rules of how combat in ER works), but a lot of them are just fucking weird and hold their attacks. One of the earliest examples is how Margit raises his staff high and just... holds it there. For a really long time, before bringing it down on you. Out of universe, it's to catch reflexive rolling, but the problem is it just looks bizarre and unnatural, like why would ANYONE fight like that? The same vid did acknowledge that Godrick the Grafted was much better and his attacks come out where they feel like "they should" from his wind-ups.

Love the game, feels like the difficulty is unfair and cheap, but eventually I leveled up enough to where Im pretty strong.

My theory about Margit is that he is basically Owl with a just enough of a different skill set that makes it all seem familiar but still daunting even when you think youve figured him out. Usually by then you get him downed anyway.
