Mostly because why are they selling the shit they're selling? The sandwiches I get, that's exactly what I'd expect from a place like that, but I don't see why they're the kinda place that'd need a big-ass pot of seafood stock cooked daily or why they'd need one dude exclusively devoted to baking. The place has like four tables in the dining room, you'd need everything to be sold in to-go containers. I get that Carm is changing the menu, presumably in aims of making it more of a fine dining place, but most of this stuff predates him. The thing is, I've been in those types of sandwich shops where they make hot sandwiches (not in Chicago but in NY), and I have to say...the kitchen isn't *nearly* as hectic as they make it look in The Bear. Part of the problem with the place is everyone is seemingly set on their ways and resistant to change. So due to that friction occurs. The show is very authentic to how a kitchen can combust though. --- lolAmerica ... Copied to Clipboard!
