Brined dis bish for 2 days in buttermilk, pickle juice, and spices. Double breaded it and then added breadcrumbs. Came out the crispiest chicken I've had in my damn life. Would recommend. It surprised me. Frying chicken is easy in concept, but hard and laborious in practice. Pre-Seasonings: - Pickle brine and buttermilk - garlic powder - onion powder - cracked black pepper Flour seasoning: - 2.5 cups of all purpose flour - garlic powder, 2 tbsp - onion powder, 2.5 tbsp - chili powder, 2 tbsp - dried oregano, 1 tbsp - cracked black pepper, roughly 1/4 cup - kosher salt, roughly 1/3 cup <--- this was a mistake. I should have used less salt Egg seasoning (9 eggs) - two pinches of kosher salt - 20 grinds of black pepper I breaded it like so: flour -> egg -> flour -> egg -> breadcrumbs -> fry --- This rant was brought to you by your local random thinker. I fried them from anywhere between 3-5 minutes each batch. Brined them for two days. Could have likely gone with just 24 hours, but alas. MorbidFaithless posted... Well done, that looks professional.
