Thigh. Juicy and still a good size. Don't get me wrong I like a good breast and they can be juicy as well but just not to the same level thighs are. Also a nice drumstick/leg is great too. Wings are my least favorite despite their popularity.

Rice flour is honestly a better option, and would allow gluten free people to be able to eat fried chicken more easily when out and about. I'm surprised it isn't more popular.

Have you ever tried potato flour for chicken? Rice flour is obviously the go-to for eastern styles of fried chicken but I feel like potato flour would add an extra layer of comfort to hearty, southern-style fried chicken.

I have tried that, also mixed with rice flour and tried corn starch as well, tried tapioca and arrowroot starch, millet flour, almond flour, sorghum flour, all kinds of stuff. Usually some type of mixture works best but often times I just go with just straight rice flour. It is great.

i love good chicken breast, but thigh is so much easier to cook. you've got to be very precise with breast meat but dark meat in general is way more tolerant of overcooking, hell you want to cook it longer then white meat. much easier to grill dark meat because of it.

My dad and I were the weirdos in our immediate family when I was still a kid who would order a plate of fried chicken livers and eat them much to the disgust of my mom and younger brother as they both werent a fan of chicken livers at the time, nor do I think they are now that I mention it.
