It's not that hard. If you do something racist or homophobic or something like that and someone points it out, apologize. It's that simple.

99.44% of the time someone really gets in trouble is when they double down on what they said, rather than apologize. Or if they do something really blatant. It's not someone's life getting ruined for accidentally calling a trans woman "he."

It's hard to say whether he meant to be racist or not. Obviously he's not actually going to admit to making a race joke after being fired over what was perceived as being one, so we really have no idea of knowing what his intentions were. If he did mean it that way, firing him is fair game, because starting the position with a joke that's racist against 95% of the force is pretty blatantly unprofessional. If he didn't, less so. Again, though, it's hard to tell, and I can't really fault them for erring on the side of caution.

It's really one of those things that people try to build up as offensive. Watermelon is generally a big thing among southerners and, honestly, people in general. It's like that Chapelle bit on fried chicken: Yeah, it's a black stereotype, but a lot of black people like it... as do tons of white people. At a certain point, there are some things you have to write off as being racist which we, as a society, have failed to do and thus exacerbated a lot of the problem.

However, for something really offensive, you may want to check out the "Eat that Watermelon" rap starring Affion Crockett Feat Nick Cannon. I'd link directly to it but, between the blackface and racial stereotyping (even though it's blacks doing it), I reckon the mods wouldn't take too kindly to it.

I think people need to do research in order to be correct. I don't imagine me or you are offended by anything. Nah. I already know about it, but thanks for telling me I can't ever give a black person watermelon, kool-aid, fried chicken, grape soda, etc. without automatically being a big bad racist. Must suck if the black in question really does like that stuff.

Well if you give a group of black people you don't know a watermelon with a bow on it, they might not take it very well. Just saying.

The chicken thing is another whole stereotype that isn't even that bad, but that doesn't have its roots in anti-abolitionist propaganda. If you showed up with a basket of KFC, that would be another thing.

I serve fried chicken at my job and I can confirm the chicken stereotype. If I kept a list of all my customer's orders and their race I've got a good feeling that would back it up. It's something like 50% of my customers get fried chicken and 80% of my black customers get fried chicken.

Honestly it sucks for the guy, because if he was really planning on working with these guys I seriously doubt he would start with a racist joke, so I guess I take back me thinking he was doing it on purpose.
