Not to say the flavor or cooking isnt authentic but theyve come to realize that the way their grandparents burnt everything out of fear didnt add anything to the texture. My father in law always tells stories about how when he was a kid back in south korea they would go days without food, and what little meat there was was always scrap and they were afraid of parasites and disease so they figured just cook it until its died 3 or 4 deaths then you're at least safe. Unfortunately even after living here for... 40+ years they csnt seem to never get that idea out of their heads. They made a traditional Thanksgiving dinner once and the Turkey was so dry I wanted a glass of gravy as a beverage just to wash it down. Everything else she makes is out of this world though --- in this short life... we should strive to remember people for their fight, not for their weaknesses ... Copied to Clipboard!

Every American boomer (Including the president iirc) I know also loves well done steak I think it's pretty common among older people in a lot of places. This is a loose translation as her English isnt bad but it comes out in what we call Konglish (mixture of English and korean). 1. Olden days in south korea there were no rules or regulations for mest handling and processing so it cooking the hell out of meat was due to fear 2. They do enjoy raw stuff like fish because anything from the ocean was seen as pure and clean... 3. Also they dont ever char anything generally unless its ssamgyupsol. If the dish like say bulgogi is marinated then having any char on it is a sign of poor cooking skills and other Korean wives will tell their husbands and church folk you can cook *facepalm* --- in this short life... we should strive to remember people for their fight, not for their weaknesses ... I can actually say despite the like two years I spent in Korea I never did have any bulgogi with char on it! The only time I ever had any meat with char on it really was at those places you cook the meat yourself, because my cooking skills are poor.

I dont think Koreans have a problem with pests/germs whatever, because my Korean relatives have cooked meat dishes and left them uncovered, on the stove, overnight, and then reheated it the next morning like it was a totally normal thing to do.
