Metalmind - In the Mario platformers, Bowser already distinguishes himself as Marios imposing, tenacious foil, with occasional touches of humor befitting the Mario series general lighthearted tone. However, I think I can speak for most Bowser fans in saying that its the RPGs that have really caused him to stand out as one of our favorite video game characters. From partnering with Mario in order to ensure Bowsers the one who gets to beat him in Super Mario RPG through his in-between-chapter platforming romps in The Thousand-Year Door to the frequently hilarious showcase that is Bowsers Inside Story, the RPGs expand his roles and characterization in a wonderful way, even while staying true to what was there in the first place. Ive always been a believer that gameplay is an important element in making the best characters stand out, and Bowser also triumphs here; its a ton of fun to play as him, with his unique moveset and incredible power and endurance, in any game where doing so is an option.

Tangy - Dude I love me some Bowser, he has a really intimidating design with some killer music and a great sense of building design. That said his main series roles are not why I love him so much. His roles in the RPG series are so well written and genuinely funny that you easily root for a character who's normally a pretty standard video game villain. He's so good in these games that Nintendo actually started moving a lot of it over to the main series games and other spinoffs. The final cherry on top for Bowser's delicious sundae of a character is he's also a loving father, sure he's guilty of some favoritism and good ol' fashioned child endangerment, but he really does care about his kids, or at least Bowser Jr.

Ange - He's become so important to the series it's fair to call him a deuteragonist. The first game sets up as very competent if kinda douchey. But as the series goes on, he finally starts to be more on Phoenix's side and while he develops he never loses his skills which is always nice to see. Some of his awkward social moments help give him character.

Tangy - So I'm sure old Edgey poo made it farther than Gumshoe, so I'm not going to hide the fact that I like Gumshoe more, that said however Edgeworth is still great! Seeing this dirty slimeball of a prosecutor gradually turn into someone on the side of justice with a soft spot for Silver Samurai is incredibly touching and heartfelt. It's a plot line that hasn't been executed as well ever since, despite many, many attempts. The only thing that hurts him for me is after the first game is character just kinda stagnates and I think there's a lot of attempts to retcon some of his dark past. Regardless of the however AA1 Miles is more than enough to make up for any slight missteps the later entries might have made.

Metalmind and Tangy pretty much covered my thoughts on Bowser, and why hes my favorite character. I also think theres an interesting balancing act going on where they make Bowser likable, without excessively downplaying his villainous qualities. Hes straight-up adorable imo.
