Restricted in the sense that you're limited to one package per customer, or restricted in the sense that nobody's allowed to buy yeast? In the former case, it's because yeast is an item people have been buying en masse, presumably under the pretense of being able to have bread even if grocery stores don't have any available (flour's been pretty depleted for the same reason). In the latter, I haven't heard of that happening anywhere in Canada except the occasional First Nations community that has such a severe problem with alcoholism that they've enacted prohibition and need to limit access to yeast to prevent home brewing, and I haven't heard of it happening due to lockdown, but that could explain it.

In the sense that all the yeast is being kept in a store's storage and not being available for sale. Its just a high theft item thats easy to take away as it comes eather in foil packs or the "bulk" is super small. Its kinda like how alot of prenancy test are behind the counter 2-4 weeks aftern prom

I also grabbed a jar when it all started, though so far I've had no problem getting bread. I used it the other night to make some naan, so that was fun.

Heck they didnt even know they sold a display (styrofoam) over a 1/4 ofnsheet cake. Ask about the cressants as well. I have not seen any shortage of bread on shelves. The lack of flour is probably just people at home stress-baking all the damn time.

I read some article saying you could make your own yeast by grabbing some old dried fruit from a cupboard, mixing it in a glass with some water until its cloudy, and then adding a bit of flour to the water to make sort of a goop and then just leaving it in your cupboard to let the yeast propagate

And most fermented beverages throughout history. Commercial yeast has really only been around for the last couple centuries. Prior to that, everything was made by spontaneous fermentation. One of the better-known beer purity laws (Reinheitsgebot) was passed in Bavaria in 1516 and stated that beer was only allowed to be made from water, barley, and hops, since they didn't know that yeast existed (the law has since been revised to include yeast). ...
