I haven't died yet. *shrug* Seriously though I have been keeping up with my work outs and have been doing them for over a month now barring a week break because of a shoulder injury from work. The trick Ive adopted lately is that when I go to wrap them, I put them in a disposable half pan and wrap foil over the top. This way, the fat renders into the pan, and when I go to pull it, Im dredging it through its own jus. This will be my second ever brisket. Im planning to do the Goldees method, where you cook the entire thing unwrapped, then wrap in foil with tallow and hold it in a warmer / low oven for 8-12 hours or so. --- Console war in a nutshell: http://imgur.com/xA6GJZ9.png ... I'm currently taking one class, Sociology 316 (Race and Race Relations). I had my Midterm (25% of my grade) and a 6-page paper (20% of my grade) due one week after the other. Midterm wasn't multiple choice like I thought it would be, but was rather several writing prompts based on what we've gone ovee in class so far. By the time I was done I had something like 5 pages of writing completed for the midterm.
Never before have I had to write this much for a class in such a short timeframe. The last two weeks have been hella stressful. But now I'm done and I feel very good about it. Even had my mother--a professional copy editor--go over my paper to make it look much, much better than it did before. I have a fulltime job on top of all of this, and this semester has just convinced me that I cannot take more than one class at a time. I will need to take next semester off to work as much OT as possible for financial reasons (a separate topic), but I am definitely going back next fall. I'm roughly 40% done with my bachelors right now. --- This rant was brought to you by your local random thinker. I'm as Canadian as Wayne Gretzky crashing a snowmobile into a moose. - JIC X ... I don't even use it for anything except my profile pic on Discord. But it's the best way I have to express myself right now, so I like to fiddle with it now and again, and I sometimes get results I'm really proud of~

We've nailed pork shoulders now--similar to what you do, but we have a copper pan that we use when we wrap it. Hearing the bone slide out of the vacuum of meat and fat is soooo satisfying! We've only done a few brisket, so I'll check out the Goldee method. Have you smoked ribs yet? We get them perfect in the oven, but are still struggling with them on the smoker. We've only done a few brisket, so I'll check out the Goldee method. For pulled pork, I recommend Heath Riles Tangy Vinegwr BBQ Sauce, its divine. Sure. I started with Malcolm Reeds Malcolm Style Ribs, and I still like that recipe. https://youtu.be/kRe0WymG1Jk?si=bXeVXn7MopXajI1j If Im doing my own thing, I remove the membrane, do a mustard slather, then season the back, let them hang out for 15 minutes, flip over and season the meat side, let them hang out for 15 minutes. I like a savory run for ribs. I tend to smoke them at 250 with a blend of hickory and cherry until the bark is set, and Ill spritz with a 50/50 mixture of water and apple cider vinegar when they need it after the first hour, every hour or so. When I wrap, I put down a double layer of foil, then cut up two sticks of salted Kerrygold butter into pats, lay 4 pats down, lay the runs meat side down on them, then lay 4 pats over the back, then wrap tightly and put them back on to cook until tender, usually takes about 2 hours, but when an instant read thermometer says about 202 in the back, theyre done, aside from the bend test. Once tender, I remove them from the foil and put them back on, glazing with whatever sauce Im using. I keep a squeeze bottle with about 3/4 Sweet Baby Rays and 1/4 Apple cider vinegar to thin it that I shook up to mix, so I use that a lot. Next time I do them, Ill try the Goldees sauce since I ordered it with their runs, as I wanted to use their brisket rub tonight. In any case, I just let the sauce tack up. Then theyre done. Let them rest about 10 minutes before slicing. --- Console war in a nutshell: http://imgur.com/xA6GJZ9.png ... Copied to Clipboard!
